Stocked Drinks menu engineering

Which drinks earn their place on the menu.

Each drink is judged on how well it sells and how much it makes, against the others in its own section, so pints aren't up against cocktails.

First month free, then £19.99 a month. No card to start, no contract.

Cocktails on a chart: Espresso Martini, Pornstar Martini and Aperol Spritz are stars, the Jägerbomb sells most but makes least, and the Margarita and Mojito make good money but don't sell

The four kinds of drink.

StarsSell well and make good money. Keep them, and keep them easy to find on the menu.
Plough horsesSell well but make less than most. Look at the spec or the price.
PuzzlesMake good money but don't sell. Move them up the menu or get staff suggesting them.
DogsDon't sell and don't make much. Rework them or take them off.

How it's judged.

Sells wellA drink sells well if its share of its section's sales is at least 70% of an equal share.
Makes good moneyIts profit per sale is at least the section's average, weighted by what sold.
Profit after VATStocked takes the VAT off the menu price, so the profit it shows is what's really left.
