How GP on a drink works.

The sums the calculator does, the same ones Stocked uses.

Cost per serveWhat the bottle cost, divided by its size, times the measure. Add the mixer and garnish.
Take the VAT offA £6.00 drink with 20% VAT is £5.00 to you. The profit comes out of the £5.00.
GP %Profit divided by the price without VAT, times 100.
Price for a targetCost divided by (1 − target), plus VAT, rounded up to the next 5p so it's a price you'd print.

What GP should I aim for on drinks?

That's your call, and it usually differs by drink: draught tends to make a lower percentage than spirits and cocktails. Stocked starts with a 75% target that you change to your own.

Is GP worked out with or without VAT?

Without. VAT goes to HMRC, so the calculator and Stocked take it off the menu price before working out profit.
